Blueberry Ginger Mojito
(Recipe for two tall glasses)
Ginger simple syrup:
ΒΌ cup sliced fresh ginger
1 cup sugar
1 cup cold water
Slice fresh ginger and add to sugar and water in a saucepan. Boil and stir until the sugar dissolves. Cover and let steep for 15 minutes. Strain and cool in the refrigerator. Note that this makes enough for 2-3 portions of the mojito.
Mojito:
1 cup blueberries
1 lime, cut in wedges
20-14 fresh mint leaves
4 oz ginger simple syrup
4 oz vodka*
5 oz club soda
Add blueberries, lime wedges, and mint leaves to a pitcher. Muddle with a wooden spoon so blueberries are broken and the mint and lime release their juices. (This step can be done in advance, covered and stored in the fridge until ready to serve). When ready to serve, add the simple syrup, vodka, and top off with club soda. Stir and pour through a strainer over ice into glasses. Garnish with a handful of fresh blueberries and a sprig of mint.
* Can be excluded for a refreshing non-alcoholic version.
